Bruschetta

1 can (400g) chopped tomatoes,
drained
2 tablespoons chopped fresh basil
leaves
1 tablespoon extra virgin olive
oil
1 clove garlic, finely chopped
2 Country Kitchens Demi Baguettes

Mix tomatoes, basil, olive oil and
garlic in a bowl.
Preheat oven to 210 C and bake the
demi baguettes for 7 minutes.
Allow to cool a little and slice
diagonally into approx. 9 slices.
Toast under medium grill for 1
minute. Spoon the tomato mixture
onto the toasted slices and serve
immediately.
